Why Edosushi? The word edo represents the best of Japanese tradition and openness to the world. The original name of the island capital was taken up by an entire Japanese society in the second half of the 19th century, turning a closed empire into a world great power in a matter of decades. This was thanks to Japan's notorious diligence, determination, reliability and emphasis on quality.
